We are currently seeking an experienced, and<br \/>\nthorough cost controller to join our rapidly growing firm. In this role, you will demonstrate<br \/>\nyour skills, knowledge, and experience.<br \/>\nPlease only apply by email below with Resume, Qualifications, availability, and a cover letter<br \/>\ndemonstrating suitability for the position.<\/p>\n<p><strong>Position Summary:<\/strong><\/p>\n<ul>\n<li>As a Food and Beverage cost controller, you are primarily responsible for calculating costs of<br \/>\nfood and beverage items and also responsible for the\u00a0short\u00a0and long-term planning of the<br \/>\nf&amp;B\u00a0controlling\u00a0and pricing aspects.<\/li>\n<li>Additionally responsible to record information and produce control reports periodically to<br \/>\nhelp maintain a suitable\u00a0inventory\u00a0of food and beverage items for the entire\u00a0hotel. He\/she<br \/>\nalso changes the price of\u00a0menus\u00a0items based on the costing information they collect and<br \/>\nalso actively take part in engineering the menu in terms of the pricing.<\/li>\n<\/ul>\n<p><strong>Duties and Responsibilities:<\/strong><\/p>\n<ul>\n<li>Able to effectively control the Food &amp; Beverage Cost.<\/li>\n<li>Control the Food and Beverage outlets in terms of wastage, pilferage, and efficiency.<\/li>\n<li>Prepare variance analysis for food &amp; beverage and communicating with relevant<br \/>\nparties.<\/li>\n<li>Update and maintain receipts into the systems (FMC).<\/li>\n<li>Check and verify voids in the POS systems.<\/li>\n<li>\u00a0Check and verify discounts on the POS systems.<\/li>\n<li>Check and verify all complimentary sales in POS systems.<\/li>\n<li>Check and verify all staff meals.<\/li>\n<li>Check and verify all settlements done on the POS system.<\/li>\n<li>Check and cross verify if all sales have been transferred correctly to the Property Management systems (PMS).<\/li>\n<li>Check and verify for any lost postings.<\/li>\n<li>Check the cost of sales in all F&amp;B outlets and ensure that the costs are within budget.<\/li>\n<li>Check the menu pricing on the POS systems and ensure the correct prices are loaded.<\/li>\n<li>Check the restaurant and bar checks on daily.<\/li>\n<li>Check the complimentary and confirm that all are approved.<\/li>\n<li>Daily Import of Micros Sales to Materials Control system.<\/li>\n<li>Tally all end of shift reports generated from all POS tills<\/li>\n<li>Continuously study weaknesses in F&amp;B control implemented at the Hotel and provide suggestions for improvements.<\/li>\n<li>Check the daily Food &amp; Beverage revenues report submitted by the income audit for the accuracy of covers and average check.<\/li>\n<li>Responsible for preparing daily Food and Beverage Report and distribute to management.<\/li>\n<li>Responsible for monthly F&amp;B Report and distribute to management.<\/li>\n<li>Responsible for surprise spot checks at all F&amp;B outlets.<\/li>\n<li>Prepare Duty Drinks and management report and confirm that this is as per entitlement.<\/li>\n<li>Prepare the daily and monthly cost report department in relation to cost of sales.<\/li>\n<li>Prepare daily staff meal cost report.<\/li>\n<li>Participate in stock taking at the restaurants.<\/li>\n<li>Spot check on the receiving department to ensure that the scales are correct and goods are checked for quality.<\/li>\n<li>Check and ensure that no material is issued out from the store without requisition or approval from the respective department head.<\/li>\n<li>Check and ensure all menu items have a recipe.<\/li>\n<li>Coordinate with restaurant management and finance to sort out issues pertaining to<\/li>\n<li>Update selling prices in POS as per the instruction from authorised persons.<\/li>\n<li>Maintain the security of the information held by the department.<\/li>\n<li>Responsible to maintain the Menu Pricing, Consumption and POS systems.<\/li>\n<li>Any other tasks as and when required by the management.<\/li>\n<\/ul>\n<p><strong>Prerequisites:<\/strong><\/p>\n<ul>\n<li>Good verbal and written communication skills.<\/li>\n<li>Good analytics and reporting skills.<\/li>\n<li>Experience with Accounting System, POS Systems and cost and inventory systems.<\/li>\n<li>Ability to multitask, work in a fast-paced environment.<\/li>\n<li>Have a high-level attention to detail.<\/li>\n<li>Ability to work independently and to partner with others to promote an<br \/>\nenvironment of teamwork.<\/li>\n<\/ul>\n<p><strong>Education:<\/strong><\/p>\n<p>Bachelor of Commerce or Similar or bachelor\u2019s degree in Finance and Accounting or similar<br \/>\nmajor<\/p>\n<p><strong>Experience:<\/strong><\/p>\n<p>At least 3 years\u2019 experience at the same role with an up-scale (4\/5<br \/>\nStar)\u00a0hospitality\u00a0environment.<\/p>\n<p><strong>HOW TO APPLY:<\/strong><\/p>\n<p>Please send your application and resume not later than 20 th August 2022 to\u00a0<strong>hr@gibbsfarm.com<\/strong><\/p>\n<p>Only shortlisted candidates will be contacted<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Position:\u00a0Cost controller Company: Ngorongoro Safari Lodge Location: Karatu- Arusha Reports to: Financial controller.
